Early maturing variety seed can be sown in January or February in a cold frame or greenhouse that will provide edible roots in late spring. Carrots are widely cultivated in most areas of the world for their edible root that is available all year round from successive sowings. There are many named varieties, with roots varying in size and shape from short and round to long and tapering. The young seedlings are adored by slugs and so generally need some protection.
